Old mate Westie Lee of the Rock Workday and Rock Drive show has blessed us all with his ‘5C recipe’, the five c's being ‘Creamy Cajun Chicken Corn Chowder’. You can listen to his hilarious description of it here:

So, here lies your next dinner… and remember: “The crock pot is the king of it all.”
Westie Lee’s 5C Recipe
Feeds 4-6 people.
Ingredients:
3/4 medium potatoes diced
1 medium onion diced
2 or 3 chicken breasts
2 tins of creamed corn
500g of streaky bacon, cut into size of your choice
1 cup of chicken stock or 2 oxo chicken stock cubes (to be dissolved in a cup of boiling water)
Fresh cream
Cajun seasoning
Method:
Put diced potatoes in the bottom of the slow cooker. Add diced onion and then cover with cold water so the potatoes are only just covered.
Add bacon (raw) and give it a dusting of cajun seasoning. Put chicken breasts on top of the bacon and chuck on a little more cajun seasoning.
Add creamed corn on top of the chicken, and then add the cup of chicken stock, as well as salt and pepper to taste.
Whack it on high for 3.5 hours, then take out the chicken breasts and give them a shred. Chuck the shredded chicken back in and give it a good stir.
Leave for another hour, then add 250 ml of fresh cream. Stir through and “Robert’s your father’s brother.”
Goes good with a bit of garlic bread, maybe even a focaccia.
For 2/3 people or a smaller slow cooker, just halve the portions/ingredients.
